Saffron Steamed Basmati Rice

Amount  Measure       Ingredient -- Preparation Method
 --------  ------------  --------------------------------
3      cups          basmati rice -- long grain
    6      cups          water
    2      teaspoons     salt
    3      tablespoons   olive oil
    4      tablespoons   plain low-fat yogurt
1      teaspoon      saffron -- dissolved in
    4      tablespoons   hot water

This is a master recipe that details certain steps applicable to all other
 rice recipes.

 1. Clean by picking over the rice. Basmatic rice like any other contains many
small solid particles.  This grit must be removed by picking over the rice
 carefully by hand.

 2. Wash the rice by placing it in a large container and covering it with
lukewarm water. Agitate briskly with your hand, then pour off the water.
Repeat five times until the rice is completely clean. When washed rice is
cooked it gives off a delightful perfume that unwashed rice does not have. *If
using long-grain AMERICAN or Texmati rice, it is not necessary to soak or wash
five times. (Once is enough.)  Cooking rice with salt firms it up to support
the long cooking time and prevents the rice from breaking up. The grains swell
individually without sticking together The result is light and fluffy rice
 called Pearls of Persian Cuisine.

 3. Bring 6 cups of water with 2 teaspoons salt to a boil in a large non-stick
pot. Pour the washed and drained rice into the pot. Boil briskly for 6 to 10
minutes; stir gently twice with a wooden spoon to loosen any grains that may
have stuck to the bottom. Bite a few grains. If the rice feels soft, it is
ready. Drain rice in a large free-standing strainer or sieve.

 4. In the same pot, heat 2 tablespoons oil, two full spatulas of rice, 4
tablespoons yogurt, and I tablespoon saffron water; spread this mixture over
the bottom of the pot and even out with back of a spatula. This will help to
make a golden crust (_tah dig_).

 5. Take one spatula full of rice at a time and gently place it on top of the
bottom layer, gradually shaping the rice into a pyramid. This shape leaves
room for the rice to expand. Poke 1 or 2 holes in the rice pyramid with the
 handle of a wooden spoon.

 6. Cover and cook rice for 10 minutes over medium heat in order to form a gold
 crust.

 7. Dissolve 1 tablespoon oil in 1/2 cup hot water and pour over the rice
pyramid. Place a clean dish towel or 2 layers of paper towel over the pot and
cover firmly with the lid to prevent steam from escaping. Cook for 50 minutes
 longer over low heat.

 8. Remove the pot from heat. Allow to cool on a damp surface for 5 minutes
without uncovering it. This helps to free the crust from the bottom of the
pot. Then put 2 tablespoons of rice in a dish, mix with remaining saffron
water, and set aside for garnish.

 9. Gently taking one spatula full of rice at a time, place it on a serving
platter without disturbing the crust. Mound the rice into a cone. Sprinkle the
saffron rice garnish over the top. For a tastier effect, you may melt 2
tablespoons butter and drizzle over the rice.

 10. Detach the layer of crust from the bottom using a wooden spatula. Place on
a small platter and serve on the side or arrange it around the rice.

Peppermint herbal tea and coconut make a refreshing dairy-free sorbet.

Prep Time: 30 minutes

Total Time: 30 minutes

Ingredients:

  • 3/4 cup sugar
  • 2 bags peppermint herbal tea
  • 1 large coconut without any cracks and containing liquid
  • 2 or 3 drops of green food coloring if desired

Preparation:

In a saucepan bring 2 cups water to a boil with the sugar, stirring until sugar is dissolved, add tea bags, and let steep, covered for 15 minutes. Discard tea bags.
With an ice pick or a skewer, test the three eyes of the coconut to find the weakest one and pierce it to make a hole. Drain the liquid and reserve it. Bake the coconut in a preheated 400-degrees F. oven for 15 minutes, break it with a hammer, and remove the flesh from the shell, levering it out carefully with the point of a strong knife. Cut the coconut meat into small pieces and in a blender grind it in small batches, transferring it as it is ground to a bowl. Return the ground coconut to the blender.

Strain the reserved coconut liquid through a fine sieve into a large measure and add enough water to measure 2 cups liquid. In a saucepan bring the liquid to a boil, add it to the ground coconut, and blend the mixture for 1 minute. Let the coconut mixture cool, strain it through a large sieve lined with a double thickness of cheesecloth into a bowl, pressing hard on the solids, and squeeze the coconut in the cheesecloth to extract as much of the milk as possible.

Stir the tea into the coconut milk with the food coloring, if using, and chill the mixture, covered until it is cold. Freeze the mixture in an ice cream freezer according the manufacturer's instructions and store the sorbet in freezer containers. The sorbet may be made 5 days in advance and kept frozen, covered. Let sorbet stand in the refrigerator for 30 minutes or microwave it at 30% power for 1 minute to soften slightly before serving.

Ingredients:

1 tbsp (15 ml) melted butter
280 gm (2 cups) plain flour
1 1/2 tsp baking powder
1/4 tsp baking soda
500 gm (1 pound) mixed dried fruit* ( I used 400 gm of dried apricots, figs, cranberries, black and golden raisins, currants and 100 gm of walnuts and cashews)
220 gm (1 cup) brown sugar (demerara sugar)
200 gm (1 cup) butter
1 tbsp (15 ml) golden syrup or maple syrup or date syrup
finely grated zest from one orange
250 ml (1 cup) water
1 tsp baking soda or bicarbonate of soda
2 tbsp (30 ml) yogurt
1 1/2 tsp vanilla extract
3/4 tsp allspice powder
250 gm (1 cup) smoothly mashed potato
blanched and peeled almonds for decoration

Method:

Grease the base and sides of a deep 8” (20 cm) round cake tin with the melted butter. Line the base with greaseproof paper.
In a large bowl, combine the flour, baking powder and 1/4 tsp baking soda, mix well and sift once to make the mixture uniform.
In a medium sized saucepan, combine the dried fruit, sugar, butter, syrup and water and heat slowly on low heat, stirring, until the sugar dissolves. Increase the heat to medium and allow the mixture to come to a boil, reduce the heat and then simmer for 20 minutes on low heat. Remove the sauce pan from the heat, mix in the  1 tsp baking soda and allow to cool.
Once the mixture has reached room temperature, stir in the yogurt, vanilla extract, all spice, zest and mashed potato and  beat well with a whisk, until the mixture is smooth. Put in the nuts, and carefully fold in the flour, mixing until well combined
Spoon the cake batter into the prepared tin and smooth the top with the help of a spatula. Decoratively arrange the almonds over the top of the cake. Cover the cake with aluminium foil and bake at 180 degree centigrade/ 350 degrees F for 1 1/2 to 2 hours or until a skewer inserted in the centre of the cake comes clean.
Once the cake is done, allow the cake to cool completely in the tin. When the cake has cooled, place the serving plate over it and turn it upside down. Carefully remove the paper, turn it over again with the help of a plate and serve.
If possible, allow the cake to mature over night or atleast for 4 to 5 hours before slicing it up.

Kashmiri Rajma

Kashmiri Rajma With Saffron Rice Recipe

Try and select the smaller variety of rajma (kidney beans) for this recipe although you could substitute it with other varieties.

Kashmiri Rajma

Ingredients:

320 gm (1 1/2 cups) rajma beans or red kidney beans
1 bay leaf
1.25 litres (5 cups) water
250 gm (3 to 4 tomatoes. depending on size), eyes removed and ground to a puree
3 tbsp mustard oil or any other vegetable oil
1 tsp cumin seeds
3/4 tsp asafetida (or 1/2 tsp if using the stronger brown coloured variety)
1 tbsp freshly grated ginger
4 tsp coriander powder
1 tsp red chili powder
2 tbsp fresh coriander leaves or cilantro
2 1/2 tsp salt or to taste
For the spice powder or garam masala
2 moti elaichi or black cardamom, seeds without skin
6 green cardamom, seeds without skin
5 cloves
2 to 3 small pieces of cinnamon
or
1 tsp garam masala

Method:

Wash and soak the rajma beans in water overnight or for 6 to 8 hours. Discard the soaking water and place the beans in a pressure cooker along with the bay leaf and 5 cups of water. Pressure cook until the first whistle and then lower the heat and cook for 10 to 15 minutes more until the beans are properly cooked and some of them split open. The cooking time depends on the quality of the beans.
Once the beans are cooked, drain the water over a colander and reserve it.
In a wok or kadai, heat the oil over a medium flame. Pop in the cumin seeds and when then change colour, lower the heat a little and add the asafetida and the ginger. Stir for a few seconds and then add in the tomato puree. Mix well with a ladle or cooking spoon and then put in the coriander seed powder and the red chilli powder. Cook until the spices get incorporated into the tomatoes and the oil separated from the tomatoes.
Take a ladle full of the drained beans (about 1/2 a cup) and add it into the tomatoes. With the back of a spoon mash the beans well. Put in the remaining beans into the pot and stir well. Add the reserved water, salt and the coriander leaves, raise the heat to medium and bring to a boil. Lower the heat a little and cook stirring in between until the gravy thickens to the desired consistency, about 15 minutes.
Assemble all the spices in a mortar and pestle and pound into a powder. Alternatively use a coffee mill or dry spice grinder.
Put in the garam masala, stir and serve hot with rice or rotis.

Saffron Rice

Ingredients:

195 gm (1 1/2 cups) basmati rice
1/8 tsp (2 to 3 generous pinches) saffron strands
2 tbsp milk or water, warmed
1 tbsp ghee or vegetable oil
1 tsp shahi jeera or black cumin seeds
2 small pieces of cinnamon
4 cloves
560 ml (2 1/4 cups) water
1/4 tsp turmeric powder
1 1/2 tsp salt

Method:

Wash the rice in 2 to 3 changes of water over a colander in a running stream of water. Place the rice grains in a bowl, cover with water and soak for half an hour.
In a small bowl place the saffron with the warmed milk or water. Allow to soak for ten minutes or more.
Drain the rice over a colander and remove all the water. Place the saffron and the milk in a mortar and pestle and crush to extract the flavour and beautiful hue of saffron.
In a pot with a tight fitting lid, heat the ghee or vegetable oil over a medium flame. Add the cumin seeds, cinnamon and cloves, lower the flame and when the cumin turns golden brown put in the rice. Stir fry for 2 to 3 minutes. Pour the water, saffron mixture and turmeric, raise the heat and bring to a boil.
Lower the heat and cook covered for about 15 to 20 minutes or until done.
Alternatively, cook in an electric rice cooker by transferring the contents from the pot after adding the water, saffron and turmeric into the electric rice cooker.
